Things You Will Need:
- Spatula (1)
- Large Pot
- Water (5 cups)
- Colander (1)
- Sautee Skillet
- Salt (1 teaspoon)
- Pepper (1/2 teaspoon)
- Olive Oil (1/4 cup)
- Bowl (Water and Ice Inside)
- Broccoli Rabe (Rappini) (1 bunch)
- Sugar (2 teaspoons)
- Paper Towels
Step 1
Rinse and clean the large bunch of Broccoli Rabe you are using. Rinse any debris from the vegetables. Use the paper towels to pat the excess water off of the broccoli.
Step 2
Put water in the large pot. Measure out five cups. Turn the stove on medium heat. Bring the water to a hard boil.
Step 3
While the water is in the process of boiling, take on the next task. Prepare the skillet. Do this adding some olive oil to the pan. When the water begins to boil place the broccoli rabe inside the water.
Step 4
Allow the broccoli rabe to cook for about two minutes. Remove the pot of boiling broccoli from the heat. Make sure to turn the stove off at this point. Put the broccoli rabe in a colander. After if it transferred to the colander, but the broccoli directly into the cold water and ice bath. This will shock the broccoli and stop the cooking process completely.
Step 5
Now, take the broccoli rabe from the cold water and ice slurry. Drain the vegetables once more. Dry the broccoli completely. This is very important. Use the paper towels to ensure that all moisture is removed. You will be adding the broccoli to the pan with oil. Since oil and water don’t mix it can cause the oil to pop to burn you.
Step 6
Put the broccoli in the hot pan with olive oil.
Step 7
Season the broccoli with pepper, salt and a pinch of sugar. Toss the ingredients around using a spatula. Sautee the broccoli for up to five minutes. The broccoli will turn bright green. Take off from the heat and serve the broccoli hot.
